Handle crabs safely
If using live crabs, keep them chilled until ready to cook. Grasp each crab from the back carapace and lower it into the boiling water headfirst to minimize movement. If using pre-cooked crabs, simply reheat in the boiling liquid for a shorter time as directed below.
Cook crabs
Once the water returns to a boil, cover and cook live Dungeness crabs for 12–15 minutes (for 1.5–2 lb crabs). If crabs are larger, increase time to 16–18 minutes. For pre-cooked crabs, simmer 6–8 minutes to heat through. Start timing when the water returns to a full boil.
Clean crabs (optional, for serving meat)
To serve shelled meat: Remove the apron (vent) on the crab's underside, then lift off the top shell. Rinse out gills (dead man’s fingers) and internal organs. Break the body in half, crack the claws and legs with a crab cracker or mallet, and extract meat with a pick. Keep shells for presentation if desired.
Finishing Butter Sauce
Make garlic butter
In a small saucepan over low heat, melt 3/4 cup unsalted butter. Add 4 minced garlic cloves and cook gently until fragrant but not browned, about 1–2 minutes.
Flavor the butter
Remove from heat and stir in 2 tablespoons fresh lemon juice, 2 tablespoons finely chopped parsley, 1/2 teaspoon sea salt, 1/4 teaspoon freshly ground black pepper and an optional 1/4 teaspoon cayenne for a touch of heat. Keep warm until serving.
To Serve
Plate and present
Place whole or cleaned crab pieces on a serving platter. Serve with lemon wedges, extra melted butter for dipping and crusty bread or steamed potatoes. Provide nutcrackers, picks and small bowls for shells and juices.
