    If using jarred/salted leaves, rinse under cold water to remove brine and soak 15 minutes. If using fresh leaves, trim thick stems. Bring 2 liters (about 8 cups) of water to a boil with 1 tsp salt and 1 tbsp lemon juice.

    Blanch leaves in boiling water 20–30 seconds until pliable. Remove and immediately plunge into a bowl of cold water to stop cooking. Lay leaves flat, pat dry and stack with the vein side up for stuffing.

Filling - rice & vegetables

    Par-cook rice

    Place rinsed rice in a bowl and pour 1 cup of boiling/hot water over it. Cover and let stand 10 minutes until water is mostly absorbed but rice still slightly firm. Drain any excess water.

    Heat 3 tbsp olive oil in a medium skillet over medium heat. Add the chopped onion and a pinch of salt; sauté 6–8 minutes until translucent and beginning to brown at the edges.

    Add diced green pepper and tomato to the onion; cook 3–4 minutes until softened. Stir in tomato paste and cook 1 minute to bloom the flavor.

    Add par-cooked rice to the skillet along with parsley, dill, pine nuts and raisins (if using). Season with cumin, cinnamon, black pepper and 1 tsp salt. Mix thoroughly and remove from heat. Allow filling to cool until warm but manageable (10–15 minutes). Taste and adjust salt/pepper or lemon juice (add remaining 2 tbsp lemon juice to brighten if desired).

Assembly & cooking

    Prepare a wide, shallow pot for rolling: place 1 tbsp olive oil and arrange lemon slices in a single layer on the bottom to prevent tearing and add flavor.

    Take one grape leaf, vein-side up, stem end toward you. Place about 1 tablespoon (level) to 1.5 tablespoons of filling near the stem end, centered. Fold the bottom stem edge up over the filling, fold both sides inward snugly, then roll tightly away from you to form a neat cylinder. Repeat with remaining leaves and filling. You should get about 40 rolls depending on filling amount; reserve any extra filling to serve alongside if needed.

    Arrange rolls seam-side down in the pot in concentric rings, packing them snugly. When the first layer is complete, continue layering, pressing gently but avoiding crushing. Pour 2 cups of vegetable or chicken stock over the rolls (enough to come near the top but not submerge), then drizzle remaining 1 tbsp olive oil over top. Place a small heatproof plate on top of the rolls to weigh them down and keep them submerged; cover the pot with a lid.

    Bring pot to a gentle simmer over medium-low heat. Cook covered for 35–45 minutes until rice is tender and liquid is mostly absorbed. Check after 30 minutes: if liquid is low and rice still firm, add up to 1/2 cup hot water and continue cooking.

    When cooked, remove from heat and let rest, covered, for 15–20 minutes. This helps set the rolls and finish steaming.

    Transfer stuffed grape leaves to a serving platter. Drizzle with additional lemon juice to taste and a little olive oil. Serve warm or at room temperature with yogurt or tzatziki if desired.
