    Prepare chicken

    Trim any fat from the chicken breasts and cut into 1-inch cubes. Pat dry with paper towels.

    Make marinade

    In a bowl, combine 1 cup Greek yogurt, 2 tbs olive oil, 2 tbs lemon juice, minced 3 garlic cloves, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, 1 tsp black pepper and 1 tsp kosher salt. Whisk until smooth.

    Marinate chicken

    Add the chicken cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 1 hour, preferably 3–4 hours, or overnight for best flavor.

    Cook chicken

    Thread marinated chicken onto skewers (if using wooden skewers, soak 30 minutes first). Preheat grill or grill pan to medium-high. Oil grates lightly. Grill skewers 8–10 minutes, turning every 2–3 minutes, until exterior is golden and internal temperature reaches 165°F (74°C). If not using skewers, cook chicken in a hot skillet with a little oil, 6–8 minutes, stirring occasionally, until cooked through. Remove from heat and let rest 5 minutes, then remove chicken from skewers if used.

Vegetables & Assembly

    Prepare vegetables

    While chicken marinates, dice cucumber (to equal about 1 cup), halve cherry tomatoes, thinly slice red onion to make 1/2 cup, and core and cut green bell pepper into 1/2-inch strips. Chop parsley and shred romaine lettuce.

    Cook bell pepper (optional)

    If you prefer the pepper slightly softened, toss strips with 1 tbs olive oil and a pinch of salt and pepper. Grill or sauté over medium-high heat for 4–5 minutes until slightly charred and tender. Remove from heat.

    Warm tortillas

    Warm the flour tortillas for 10–20 seconds per side in a dry skillet over medium heat or wrap stack in foil and warm in a 300°F (150°C) oven for 5–8 minutes. Keep warm wrapped in a clean towel.

    Assemble wraps

    Lay a warm tortilla flat. Spread about 1–2 tbs of the tzatziki-style sauce in the center. Layer 1/4 of the shredded romaine, 1/4 cup cucumber, 1/4 cup cherry tomatoes, 2–3 tbsp red onion, a portion of grilled peppers (if used) and 1/4 of the cooked chicken. Sprinkle with chopped parsley and add salt and pepper to taste. Drizzle another 1 tbs sauce on top if desired.

    Roll and serve

    Fold the bottom edge over the filling, fold in the sides, and roll tightly to form a wrap. If desired, grill the wrapped sandwich seam-side down for 1–2 minutes per side to seal and add crispness. Cut in half and serve immediately.

Sauce (Tzatziki-style)

    Make sauce

    Grate 1/2 cup cucumber and squeeze out excess water using a clean towel or paper towels. In a small bowl, combine 1/2 cup Greek yogurt, the grated cucumber, minced 1 garlic clove, 1 tsp lemon juice, 1 tsp extra-virgin olive oil and 1/2 tsp dried dill. Season with salt and pepper to taste and stir until smooth. Chill at least 15 minutes to allow flavors to meld.
