    Combine and season

    In a large bowl combine the ground beef and ground lamb. Add the grated onion (including the juice), minced garlic, chopped parsley, dried oregano, ground cumin, ground coriander, smoked paprika, salt, black pepper and 1 tablespoon olive oil. Mix with your hands or a spoon until ingredients are evenly distributed but avoid overworking the meat (mix ~30–45 seconds).

    Chill

    Cover the bowl and refrigerate for at least 30 minutes and up to 2 hours to let flavors meld. If short on time, proceed immediately.

    Cook the meat

    Heat a large skillet or cast-iron pan over medium-high heat. When hot, add a small drizzle of oil or nonstick spray. Add the meat mixture, breaking it into small pieces with a spatula. Cook 6–8 minutes, stirring occasionally, until browned and cooked through and most moisture has evaporated. Taste and adjust seasoning with additional salt and pepper if needed.

Tzatziki Sauce

    Prepare cucumber

    Place the grated cucumber in a fine sieve or clean kitchen towel and squeeze out excess liquid. This prevents a watery tzatziki.

    Mix sauce

    In a bowl combine the Greek yogurt, drained grated cucumber, 1 teaspoon minced garlic, 1 tablespoon lemon juice, 1 teaspoon olive oil, chopped dill, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir until smooth. Taste and adjust lemon, salt or garlic. Refrigerate at least 10 minutes to let flavors marry.

    Prepare vegetables

    Slice the tomato and thinly slice the red onion. If onion is sharp, soak slices in cold water for 5 minutes and drain to mellow the bite. Shred the lettuce and slice pickles. Keep vegetables chilled until assembly.

    If using feta, crumble and set aside for final assembly.

    Warm the flatbreads

    Heat a large skillet over medium heat and brush each pita or flatbread lightly with olive oil or melted butter. Toast 30–45 seconds per side until warm and lightly browned and pliable. Alternatively, wrap in foil and warm in a 350°F (175°C) oven for 5–7 minutes.

    Assemble gyros

    Lay a warm pita on a plate. Spread about 2–3 tablespoons of tzatziki down the center. Add about 150 g (roughly half the cooked meat) of the beef-lamb mixture, then top with sliced tomato, a few rings of red onion, shredded lettuce, sliced pickles and 1–2 tablespoons crumbled feta if using. Squeeze a little lemon juice over the filling if desired.

    Fold and serve

    Fold one side of the pita over the fillings and roll to enclose (use parchment or foil to help hold). Serve immediately with extra tzatziki and lemon wedges on the side.
