Prepare the bread
Spread the unsalted butter evenly on the outer sides of both rye bread slices. On the inner side of one slice, spread the Dijon mustard and on the inner side of the other slice spread the mayonnaise (and optional yellow mustard if using).
Assemble meat and cheese
Pile the sliced hot pastrami in an even layer on top of the mustard-covered inner slice. Arrange the two slices of provolone cheese over the pastrami so they cover the meat. Sprinkle the freshly ground black pepper evenly over the cheese and meat. If you like, add the sliced dill pickles on top of the cheese (or serve on the side).
Grill the sandwich
Heat a nonstick skillet or griddle over medium heat. Place the assembled sandwich into the skillet with the buttered outer slice contacting the pan. Press gently with a spatula. Cook 3–4 minutes until the bottom is golden brown. Flip the sandwich carefully and cook the second side 3–4 minutes, pressing gently, until golden brown and the cheese is melted. If the cheese needs extra melting without over-browning the bread, add 2 tablespoons of water to the pan away from the sandwich and immediately cover with a lid for 30–60 seconds to create steam and melt the cheese.
Rest and slice
Transfer the sandwich to a cutting board and let rest 1 minute to settle. Slice the sandwich diagonally or down the middle, and serve immediately with pickles on the side or tucked inside.
