Prepare strawberries

Rinse strawberries under cold water, pat dry with a towel, remove crowns (hulls). If any strawberry is large, halve it lengthwise so pieces are roughly the same size as other fruit on the skewer.

Cut pineapple

Trim the pineapple, remove skin and core, and cut into 1-inch (2.5 cm) chunks. Keep chunks uniform so they cook and present evenly.

Prepare grapes and blueberries

Rinse grapes and blueberries; drain well. Remove any stems from grapes.

Peel and slice kiwi

Peel the kiwis and cut into 1/2-inch thick rounds. If rounds are large, cut each round into halves to fit on skewers neatly.

Prep apple

Core the apple, cut into 8 wedges, and then cut each wedge into 1/2-inch thick slices. Immediately toss apple slices in 1 tablespoon of lime juice to prevent browning.

Prep banana

Peel the banana and cut into 1/2-inch thick rounds. To minimize browning, assemble skewers quickly and brush with remaining lime juice if desired.

Assembly & Finish

Make the honey-lime glaze: in a small bowl whisk together 2 tablespoons honey and 1 tablespoon lime juice until smooth. If honey is very thick, warm slightly for 5–10 seconds in the microwave to thin.

Thread the fruit: using 8 skewers, thread fruit pieces in an attractive alternating pattern (for example: strawberry half, pineapple chunk, grape, kiwi half, blueberry cluster, apple slice, banana round). Leave about 1 inch of skewer at one end for handling. Aim for 6–8 pieces of fruit per skewer depending on size.

Glaze and garnish: brush each assembled skewer lightly with the honey-lime glaze. Sprinkle a tiny pinch of sea salt over the skewers if using to enhance flavor. Scatter chopped toasted coconut and/or tuck a mint leaf between fruit pieces for garnish if desired.

Chill or serve: place finished skewers on a platter and refrigerate for up to 30 minutes to serve slightly chilled, or serve immediately at room temperature. If preparing ahead, store unglazed fruit cut and chilled separately and assemble within 1–2 hours of serving to avoid sogginess.

Optional serving suggestion: serve with a small bowl of yogurt, chocolate sauce, or a citrus-honey dipping sauce on the side.
