Prepare the Potatoes
Preheat your oven to 400°F (200°C). Peel and cut the potatoes into wedges or chunks, depending on your preference.
Mix the Marinade
In a large mixing bowl, combine olive oil, minced garlic, dried oregano, lemon juice, salt, and black pepper. Whisk together until well combined.
Coat the Potatoes
Add the potato wedges to the bowl with the marinade. Toss well to ensure each piece is evenly coated.
Bake the Potatoes
Spread the coated potatoes on a baking sheet in a single layer. Bake in the preheated oven for about 45-50 minutes, or until golden brown and crispy, flipping halfway through.
Serve
