Preheat your oven to 400°F (200°C). Peel and cut the potatoes into wedges or chunks, depending on your preference.

In a large mixing bowl, combine olive oil, minced garlic, dried oregano, lemon juice, salt, and black pepper. Whisk together until well combined.
