1. Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
2. Mix the Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.
3. Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
4. First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for 1 hour or until doubled in size.
5. Shape the Pitas
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a disk about 1/2 inch thick.
6. Second Rise
Cover the disks with a damp cloth and let them rest for 30 minutes.
7. Preheat Oven
Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat.
8. Bake the Pitas
Carefully place the disks on the hot stone or sheet and bake for 5-7 minutes, until they puff up and are lightly browned.
