Your choice of protein with roasted veggies, sprinkled with parsley and served on hummus
Preheat the oven to 400°F (200°C). In a mixing bowl, combine zucchini, bell pepper, and red onion. Drizzle with olive oil, garlic powder, salt, and black pepper. Toss until veggies are well coated. Spread on a baking sheet and roast in the oven for 20-25 minutes or until tender and slightly caramelized.
In a serving bowl, spread a generous layer of hummus at the bottom. Add your choice of cooked protein on top of the hummus.
Once the vegetables are roasted, remove them from the oven and let cool slightly. Layer the roasted vegetables over the protein and hummus. Sprinkle chopped fresh parsley on top for garnish.
