Preparation
Marinate the Chicken
In a large bowl, combine the gochujang, soy sauce, minced garlic, and grated ginger. Add the chicken wings, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
Prepare for Frying
Remove the chicken from the marinade, allowing excess marinade to drip off. Dredge each wing in cornstarch until fully coated. Shake off any excess cornstarch.
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
Fry the Chicken
Carefully add the chicken wings to the hot oil in batches, frying for about 8-10 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Serve and Garnish
Serve the fried chicken hot, garnished with pickled daikon and carrots, and drizzle with Kewpie mayonnaise if desired.
