Method
Preparation of Coffee Mixture
Prepare the Espresso
Brew 1 cup of strong espresso coffee and allow it to cool slightly. Once cooled, mix in 1 cup of Marsala wine. Set aside.
Prepare the Ladyfingers
Quickly dip each ladyfinger cookie into the coffee mixture, ensuring they are soaked but not soggy. Arrange them in a single layer at the bottom of a 9x13 inch dish.
Preparation of Filling
Whisk Egg Yolks and Sugar
In a large mixing bowl, whisk together 4 egg yolks and 1 cup of granulated sugar until the mixture is thick and pale.
Add Mascarpone
Gently fold in 16 oz of mascarpone cheese into the egg yolk mixture until smooth and well combined.
Whip Heavy Cream
In a separate bowl, whip 1 cup of heavy cream until stiff peaks form.
Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.
Assembly
Layer the Filling
Spread half of the mascarpone filling over the layer of soaked ladyfingers in the dish.
Repeat Layers
Add another layer of soaked ladyfingers on top of the filling, followed by the remaining mascarpone filling.
Chill
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
Finishing Touch
Add Cocoa and Chocolate
Before serving, dust the top with 2 tablespoons of cocoa powder and sprinkle with 1 oz of dark chocolate shavings for garnish.
Serve
Cut into squares and serve chilled. Enjoy your homemade tiramisu!
