Sage-Infused Gin

    Bruise and steep

    Place 6 fresh sage leaves in a small glass jar or measuring cup. Using the back of a spoon or a muddler, gently bruise the leaves to release aromatics — do not shred. Add 2 oz London dry gin and 0.5 oz simple syrup to the jar. Stir briefly to combine, cover, and let steep at room temperature for 5–10 minutes. Taste after 5 minutes: the flavor should be herbaceous but not grassy. If too mild, allow up to 10 minutes. Strain the gin through a fine mesh strainer or coffee filter into a clean container to remove leaves and sediment.

    Shake and chill

    Fill a cocktail shaker with ice. Add 0.5 oz fresh lemon juice, 0.25 oz Campari, and the strained sage-infused gin (2 oz). Shake vigorously for 10–12 seconds until the outside of the shaker is very cold (this both chills and dilutes the cocktail properly).

    Strain and present

    If serving up: Double strain (through the shaker strainer and a fine mesh) into a chilled coupe or Nick & Nora glass to remove any tiny herb fragments and ice chips. If serving on the rocks: place a large ice cube into a rocks glass and strain over the ice.

    Garnish

    Express a lemon twist over the drink (pinch the twist skin facing the cocktail to release oils) and rub it lightly on the glass rim if desired. Gently slap the remaining sage leaf between your palms to wake its aroma and float it on the surface (or skewer it on a pick and rest across the glass). Serve immediately.
