Method
Cocktail
- 1
Prepare glass
Fill a Collins or highball glass with crushed ice to chill while you build the cocktail.
- 2
Dry shake (optional)
If you prefer a slightly frothier texture, add the rum, lime juice, orange liqueur, orgeat, simple syrup, bitters, and cream to a cocktail shaker without ice. Dry-shake vigorously for 10 seconds to help emulsify the cream with the other ingredients.
- 3
Shake with ice
Open the shaker, add ice (large cubes or crushed) and shake hard for 10–12 seconds until well chilled and slightly diluted.
- 4
- 5
Top and finish
Give the drink a gentle stir once to integrate the layers. Add the final 0.5 oz splash of cream on top if you prefer a visible creamy float, or fold it into the drink during the shake for uniform creaminess. Garnish with a sprinkle of toasted almond slivers and a lime wheel or mint sprig if desired.
- 6
Serve
Serve long with a straw. Encourage the drinker to sip through the crushed ice so they get alternating hits of sweet almond-orgeat, citrus, bitters and the smoothing cream.
