Trim and season
Pat the filet mignon tips dry with paper towels. Trim any excess silver skin or connective tissue. Season lightly with kosher salt and black pepper and set aside while you prepare the sauce (10 minutes).

Sear
Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot (2–3 minutes). Add 1 tablespoon neutral oil and swirl to coat. Add the filet tips in a single layer, working in batches if needed so pieces aren't crowded. Sear without moving for 1–2 minutes until a deep brown crust forms, then turn and sear the other sides for 1–2 minutes for medium-rare (internal ~125–130°F). Remove seared tips to a plate and tent loosely with foil.

Make the sauce
In a medium bowl or measuring cup combine 1/2 cup hoisin sauce, 2 tablespoons low-sodium soy sauce, 1 tablespoon mirin, 1 tablespoon sake, 1 tablespoon packed brown sugar, 1 tablespoon grated fresh ginger, 2 cloves minced garlic, 1 teaspoon sriracha, 1/2 teaspoon toasted sesame oil, and 1 teaspoon rice vinegar. Whisk until smooth and the sugar dissolves.

Thicken the sauce
In a small bowl whisk 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Set aside.

Reduce and finish
After searing the beef and removing it from the pan, reduce heat to medium and pour the prepared sauce into the hot pan (use the fond left from searing for flavor). Bring the sauce to a gentle simmer, scraping up browned bits with a wooden spoon. Simmer 2 minutes, then stir in the cornstarch slurry. Continue to simmer and stir until the sauce thickens and becomes glossy, about 1 minute. Taste and adjust heat (add more sriracha) or salt (add a splash of soy) if needed.

Coat the beef
Return the seared filet tips and any accumulated juices to the pan. Toss or spoon the sauce over the beef and simmer together 30–60 seconds just to heat through and let the flavors meld. Do not overcook—the beef should remain tender. Remove from heat.
Finishing & Garnish

Transfer the sauced filet mignon tips to a serving platter. Sprinkle with thinly sliced green onions and toasted sesame seeds. Serve immediately with optional lime wedges on the side for a bright finish.
