House-made Matcha Syrup (makes ~6–8 oz)
Method
House-made Matcha Syrup (prep ahead)

Combine sugar and water
In a small saucepan, combine 1 cup granulated sugar and 1 cup water. Warm over medium heat, stirring until the sugar completely dissolves and the mixture just reaches a gentle simmer (do not boil vigorously).

Incorporate matcha
Remove syrup from heat. Whisk the 2 tsp matcha powder into a small bowl with 1–2 tablespoons of the warm syrup to make a smooth paste (this prevents clumps). Then whisk the paste back into the warm syrup until fully incorporated and uniformly green.

Cool and store
Let the matcha syrup cool to room temperature, then transfer to a clean bottle or jar. Refrigerate for up to 2 weeks. Shake before use as matcha can settle.

Muddle shiso
In a cocktail shaker, add 6 tom shiso leaves (reserve one clean leaf for garnish). Gently clap the leaves between your hands to release aromatics, then add the leaves to the shaker and lightly muddle 3–4 times — just to bruise and release oils, avoid pulverizing to prevent bitterness.

Add liquids and ice
Add 2 oz Prairie organic gin, 0.75 oz house-made matcha syrup, and 0.75 oz fresh lemon juice to the shaker. Add 6 cubes of ice.

Shake
Shake vigorously for 12–15 seconds until the shaker is very cold and properly diluted (test by feeling the outside of the shaker). This both chills and aerates the cocktail for a silky texture.

Double strain and serve
Discard ice or water from the chilled glass. Using a Hawthorne strainer and a fine mesh strainer, double-strain the cocktail into the chilled coupe to remove small leaf fragments and ice shards for a clean presentation.

Finish and garnish
Optionally add 1 dash Angostura bitters on top for a subtle aromatic lift. Gently slap the reserved tom shiso leaf between your palms to release aroma and float it on the surface of the cocktail as a garnish. Serve immediately.

Tasting notes
The Soul Harmony should be herbaceous and bright — matcha sweetness balanced by lemon, with gin’s botanical backbone and a fresh shiso aromatic top note.
