Base Simple Syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Remove from heat and stir in 2 tablespoons fresh lemon juice. Cool to room temperature, then chill in the refrigerator until cold (at least 30 minutes). This yields about 1 1/4 cups syrup; measure out the amounts required for each flavor.
Strawberry Sorbet (one flavour)

Prepare strawberries
Place 2 cups hulled and chopped fresh strawberries in a blender or food processor. Add 1 cup chilled simple syrup, 1 tablespoon fresh lemon juice and 1 teaspoon salt.

Blend until completely smooth, about 45–60 seconds. Taste and adjust sweetness or acidity: add up to 1 tablespoon more syrup if too tart, or a little more lemon if needed.

For a very smooth texture, press the purée through a fine-mesh sieve into a bowl, discarding seeds and pulp. Chill the purée until thoroughly cold (at least 30 minutes) before churning.

Churn in an ice cream maker according to manufacturer instructions until soft-scoop consistency (typically 20–30 minutes). Transfer to a freezer-safe container, smooth the top, cover, and freeze at least 2 hours to firm up.
Mango Sorbet (one flavour)

Prepare mango
Put 2 cups ripe diced mango into a blender. Add 3 tablespoons chilled simple syrup, 1 tablespoon fresh lime juice, and 1 teaspoon salt.

Blend until very smooth, 45–60 seconds. Taste and adjust: add up to 1 tablespoon more syrup if needed to sweeten, or a touch more lime for brightness.

Chill the mango purée thoroughly (30–60 minutes) before churning for best texture.

Churn in an ice cream maker per manufacturer instructions until thick and creamy (about 20–30 minutes). Transfer to a shallow freezer container, smooth, cover, and freeze 2 hours to firm up.
Lemon-Basil Sorbet (one flavour)

Infuse basil
In a small blender or mortar, bruise 10 basil leaves lightly to release oils. Combine 1 cup fresh lemon juice, 1 tablespoon lemon zest, 2 tablespoons chilled simple syrup, the bruised basil leaves, and 1/2 teaspoon salt in a blender.

Blend briefly until basil is incorporated but still bright green (30–40 seconds). Taste and adjust: add more syrup if too tart, or a small pinch more salt to enhance flavor.

Strain the mixture through a fine sieve to remove basil solids and any zest bits, pressing gently to extract liquid. Chill the strained mixture until cold (30 minutes).

Churn in an ice cream maker until the sorbet reaches a soft-scoop stage (15–25 minutes). Transfer to a container and freeze at least 2 hours to reach scoopable firmness.
