Chipotle aioli

    Make the aioli

    In a small bowl combine mayonnaise, minced chipotle, adobo sauce, lime juice, minced garlic and smoked paprika. Whisk until smooth. Taste and season with 1/8 tsp salt or more to taste. Cover and refrigerate at least 15 minutes to let flavors meld.

    Cook onions

    Heat a large skillet over medium-low heat. Add olive oil and 1 Tbsp butter. Add thinly sliced onion and 1/4 tsp kosher salt. Cook, stirring occasionally, for 20–30 minutes until deeply golden and soft. If they begin to stick, add a splash of water. Stir in 1/2 tsp brown sugar and 1 tsp balsamic vinegar in the final 2 minutes to deepen flavor. Remove from heat and keep warm.

    Form patties

    Divide the 1 lb ground beef into 12 equal portions (about 1.3 oz / 37 g each). Lightly press each portion into a flat round patty about 2.5 inches (6 cm) wide and about 1/4 inch thick. Do not overwork the meat. Season both sides of each patty with a light pinch of kosher salt and a little freshly ground black pepper. Sprinkle Worcestershire sauce evenly across the patties or mix it into the meat before forming if preferred.

    Cook patties

    Heat a large skillet or griddle over medium-high heat and add 1 Tbsp butter or oil. When shimmering, place patties on the hot surface without crowding (cook in batches if needed). Cook 1.5–2 minutes per side for medium-rare to medium, pressing gently once with a spatula to ensure contact. In the last 30–45 seconds of cooking, top each patty with a small amount of shredded or a half-slice of cheddar so it melts. Transfer cooked patties to a plate and tent loosely with foil to keep warm.

    Toast buns

    Split the mini buns and spread a thin layer of butter on cut sides (optional). Toast cut sides on the skillet or griddle for 20–45 seconds until golden and crisp. Remove.

    Assemble sliders

    Spread about 1 tsp of chipotle aioli on the bottom half of each toasted bun. Place a cheddar-topped beef patty on each. Top with a spoonful (about 1 heaping tsp) of caramelized onions. Add pickles and a few cilantro leaves or microgreens if using. Finish with the top bun and serve immediately.
