    Prep cheese and cream

    Crumble the Danish blue into small, uniform pieces so it will melt evenly. Measure the heavy cream and set aside at room temperature for a few minutes to reduce chill (cold cream can cause separation).

    In a small heavy-bottomed saucepan over medium-low heat, melt the unsalted butter until foaming. Add the minced shallot and sauté gently for 1–2 minutes until softened and translucent but not browned. Add the minced garlic and cook for 20–30 seconds until fragrant.

    Create cream base

    Pour in the heavy cream and gently warm it for 1–2 minutes, stirring. Do not bring to a boil; maintain a low simmer so the cream is hot but not boiling.

    Melt the cheese

    Reduce heat to low. Add the crumbled Danish blue cheese in batches, stirring constantly with a silicone spatula or whisk until each addition is fully melted before adding more. Continue until all cheese is incorporated and the sauce is smooth and glossy (about 3–5 minutes). If the sauce seems too thick, add up to 2 tablespoons of warm cream or a splash of milk to reach desired consistency.

    Once the cheese is melted and smooth, stir in the fresh lemon juice, Worcestershire sauce, and freshly ground black pepper. Taste carefully (Danish blue is salty); add kosher salt sparingly if needed. If the sauce tastes too sharp, simmer on lowest heat for 1–2 minutes to meld flavors, stirring frequently.

    Remove the pan from heat. Transfer the melted Danish blue to a warmed serving bowl. Sprinkle chopped chives or parsley over the top and finish with an extra crack of black pepper if desired. Serve immediately with toasted baguette slices or fresh crudités. The sauce will thicken as it cools; if it becomes too thick, rewarm gently over very low heat, stirring in a tablespoon of cream at a time to loosen.
