Toasted Bread

Slice and toast
Preheat oven to 425°F (220°C). Slice the baguette on a slight diagonal into 12–14 pieces about 1/2-inch thick. Arrange slices on a baking sheet.

Remove from oven and while still warm, rub the cut side of the halved garlic clove over each toast to impart a subtle garlic flavor. Set aside to cool slightly.

Combine tomatoes
In a medium bowl, combine 3 cups diced heirloom tomatoes, 1 minced shallot, and 12 basil leaves chiffonade.

Add 2 tbs extra-virgin olive oil and 1 tsp balsamic vinegar. Season with 1 tsp sea salt and 1/2 tsp freshly ground black pepper. Toss gently and let sit 10–15 minutes at room temperature to macerate and develop flavor.

Make balsamic pearls (spherification-like, agar method)
Pour 3 tbs balsamic glaze into a small saucepan and whisk in 1 tsp agar agar powder. Bring to a simmer over medium heat, whisking, and allow to simmer 1 minute to activate the agar. Remove from heat and let cool to about 120°F (49°C).

Chill 2 cups neutral oil (such as grapeseed) in a tall container until 35–40°F (2–4°C); this helps the droplets set quickly. Using a small spoon or dropper, carefully drop small droplets of the warm balsamic-agar mixture into the chilled oil. The droplets will set into tiny pearls as they cool. Using a slotted spoon, transfer pearls to a bowl and rinse briefly in cold water to remove residual oil. Drain on paper towels.

If you prefer a simpler method, skip agar pearls and use the balsamic glaze as a drizzle (reserve about 1 tbs).

Prepare garnish: have microgreens or extra basil leaves ready.
Assembly

Assemble bruschetta
Spread about 1 generous tbs of the whipped goat cheese on each toasted bread slice (approx. 12–14 slices).

Top each with about 1 to 2 tbs of the macerated heirloom tomato mixture, letting any excess juice drain off so the toast stays crisp.

Scatter a few balsamic pearls (or a small drizzle of balsamic glaze) over each crostini. Finish with a pinch of microgreens or a small basil leaf on top.

Serve immediately so the toasts remain crisp.
