Prepare machine and portafilter
Ensure the espresso machine is warmed up (group head and portafilter warmed) and the water reservoir is filled with fresh filtered water. Flush the group head briefly to stabilize temperature.

Weigh and grind beans
Weigh 18 g of freshly roasted espresso beans. Grind to a fine, consistent espresso grind (similar to fine sand). Adjust grind so that extraction time will be 25–30 seconds for a double shot.

Dose and distribute
Place the ground coffee into a clean, dry 58 mm (or machine-appropriate) portafilter basket. Distribute grounds evenly using a distribution tool or gentle tap/leveling with your finger to avoid channeling.

Tamp
Using a flat tamper, apply firm, even pressure to tamp the grounds level and compact. Wipe any loose grounds from the portafilter rim.

Brew
Lock the portafilter into the machine's group head. Place a pre-warmed cup under the spout. Start extraction immediately and aim to pull about 36 ml of espresso (yield for a double shot) in 25–30 seconds. Stop the shot when the crema is a rich golden-brown and the flow changes from steady to thin.

Serve
Swirl the cup gently to integrate crema and espresso. Serve immediately. Taste and adjust future shots by changing grind size (finer = slower extraction), dose, or tamp pressure if extraction is too fast/slow.

Pre-warm cup
Pour hot water into the serving cup, let sit 10–20 seconds, then discard water before brewing to keep espresso temperature stable.

Clean up
Knock out the spent puck, rinse the portafilter, and wipe the group head. Backflush the machine as per manufacturer schedule to maintain performance.
