Select and weigh beans
Weigh the component beans using a kitchen scale: 12 oz Brazilian Santos, 4 oz Cerrado/Mogiana, and 2 oz natural-processed Brazilian. The proportions create a balanced, nutty base (Santos), structured sweetness and body (Cerrado/Mogiana), and a subtle fruity lift (natural).

Blend whole beans
Combine the measured whole beans in a clean, dry container or bowl. Gently tumble or stir to distribute the beans evenly so the different lots are well-mixed.

Rest the blend (recommended)
If you have freshly roasted beans, allow the blended whole beans to rest in a loosely sealed container for 24–48 hours to allow gasses to equilibrate and flavor to integrate. For older beans, immediate use is fine.

Store
Store any remaining blended whole beans in an airtight container, away from light and heat. Use within 2–3 weeks for best flavor.
Brewing (12 oz / 360 ml cup)

Grind
Grind 24 g of the blended coffee to a medium-coarse grind suitable for pour-over or to match your brewer (slightly finer for drip, coarser for French press). Grind immediately before brewing for maximum freshness.

Heat water
Bring 720 ml filtered water to a temperature of 92–96°C (197–205°F). If you don't have a thermometer, bring to a boil and let rest 30 seconds.

Bloom (pour-over method)
Place a paper filter in your pour-over cone and rinse with hot water to remove paper taste and preheat brewer; discard rinse water. Add the 24 g ground coffee to the filter and gently level. Start a timer and pour 50 ml of water evenly over the grounds to saturate them. Let bloom for 30–45 seconds to release trapped CO2.

Continue pouring
After bloom, pour the remaining water in slow, steady circular motions, keeping the water level consistent and avoiding pouring directly on the filter. Aim to finish pouring by 2:30–3:00 minutes total brew time. Adjust grind finer or coarser to achieve target brew time.

Serve
When the water has fully drained through the grounds, remove the filter and pour the brewed coffee into a preheated carafe or cups. Taste and adjust future brews: for stronger body, increase dose by 1–2 g or use slightly finer grind; for cleaner cup, use a tad coarser grind.
