Method
Jasmine Green Tea

Heat water
Bring 8 oz (about 240 ml) of water to just under boiling, about 175–185°F (80–85°C). If you do not have a thermometer, bring to a simmer and let sit 1 minute.

Place 1 tsp jasmine green tea leaves (or 1 tea bag) in a teapot or cup. Pour the hot water over the leaves/bag.

Steep for 2–3 minutes for a light floral flavor. Avoid over-steeping to prevent bitterness.

Remove leaves or tea bag. Add honey to taste (about 1 tsp) if desired, stir and serve immediately.
Earl Grey
- 5
Bring 8 oz (240 ml) water to a full boil, about 212°F (100°C).

Place 1 tsp earl grey (or 1 tea bag) in your cup. Pour boiling water over the tea.

Steep for 3–5 minutes depending on desired strength (3 for lighter, 5 for stronger).

Chamomile

Bring 8 oz (240 ml) water to a gentle boil, then remove from heat so temperature is around 205°F (96°C).

Place 1 tsp dried chamomile flowers or 1 tea bag in a cup and pour the hot water over them.

Steep for 5–7 minutes to extract the calming, mild flavors. Longer steeping increases strength but can add a slightly bitter note.

Remove flowers or tea bag. Sweeten with about 1 tsp honey if desired. Serve warm.
English Breakfast

Bring 8 oz (240 ml) water to a full boil.

Place 1 tsp english breakfast tea (or 1 tea bag) in your cup and pour boiling water over it.

Steep 3–5 minutes depending on strength preference.

Chai (Masala Chai — single cup)

Crush the cardamom pods lightly with the flat of a knife to release seeds. Lightly crush the cloves and peppercorns.

In a small saucepan, combine 4 oz (120 ml) water, sliced ginger, crushed cardamom, cloves, peppercorns and half a small cinnamon stick. Bring to a gentle boil.

Simmer the spice mixture for 3–4 minutes to bloom the flavors.

Add 1 tsp strong black tea leaves (or 1 tea bag) to the simmering spices and continue to simmer 1 minute.

Add 4 oz (120 ml) milk and increase heat until mixture just reaches a gentle boil. Watch carefully to prevent overflow.

Reduce heat and simmer 1–2 minutes to integrate flavors and allow the tea to steep in the milk.

Strain the chai into a cup, pressing gently on solids to extract liquid. Sweeten with about 1 tsp sugar (adjust to taste) and stir. Serve hot.
