Bring to temperature
Remove the T-bone from the refrigerator and pat dry with paper towels. Let sit at room temperature for 30–45 minutes so the interior comes closer to room temp for more even cooking.

Season
Season both sides generously with the kosher salt, then sprinkle the garlic powder and finish with freshly ground black pepper. Pat the seasoning into the meat so it adheres.

Sear
Add the neutral oil to the hot pan and immediately place the T-bone in the skillet. Sear without moving for 2 1/2 to 3 minutes, until a deep brown crust forms. Using tongs, flip the steak and sear the other side for 2 1/2 to 3 minutes. If the bone or tenderloin side sits lower, hold the steak with tongs to sear the edges for about 30–45 seconds per exposed edge.

Add butter and aromatics
Reduce heat to medium. Push the steak to one side of the pan, add the unsalted butter, smashed garlic cloves, thyme, and rosemary (if using) to the pan. Allow the butter to melt and foam.

Baste the steak
Tilt the pan slightly so the butter pools. Using a large spoon, continuously spoon the melted butter and aromatics over the top of the steak (basting) for 1 1/2 to 3 minutes. This adds flavor and finishes cooking. Continue until the steak reaches your desired doneness (see internal temperature guide below).

Use an instant-read thermometer inserted into the thickest part of the steak (away from bone): 120–125°F for rare, 130–135°F for medium-rare, 140–145°F for medium. Because carryover cooking will raise the temperature 3–5°F during resting, remove the steak about 3°F below your target.

Rest
Transfer the steak to a cutting board and tent loosely with foil. Rest for 8–10 minutes to allow juices to redistribute.

After resting, sprinkle flaky sea salt to taste over the steak and optionally sprinkle chopped fresh parsley. Slice the strip and tenderloin portions away from the bone against the grain into 1/2-inch slices and serve immediately.
