Bring to room temperature
Remove the T-bone from the refrigerator 45–60 minutes before cooking and pat dry with paper towels. Allow the steak to come to room temperature to promote even cooking.

Finish to temperature
After searing, move the steak to the cooler side of the grill (or reduce heat and tilt skillet off direct flame) to finish cooking. Insert an instant-read thermometer into the thickest part of the strip side (not touching bone). Target temperatures: 120–125°F for rare, 125–130°F for medium-rare, 135°F for medium. Finish time will vary but typically 4–8 additional minutes depending on thickness and desired doneness.

With about 2–3 minutes remaining, place the skillet over medium-low heat (if using skillet) or move the steak near indirect heat on the grill. Add the unsalted butter, smashed garlic cloves, thyme and optional rosemary to the skillet (or in a small heatproof pan on the cooler grill zone). As the butter melts, tilt the pan and spoon the melted, herb-infused butter repeatedly over the steak for 60–90 seconds to build flavor.

Rest
Remove the steak from heat and transfer to a cutting board. Spoon any remaining herb butter over the top. Tent loosely with foil and rest for 8–10 minutes to allow juices to redistribute. Rest time is important for tenderness and to reach final carryover temperature.

If pan-searing, keep the skillet very hot and avoid overcrowding. Use tongs to flip — never pierce the meat. On a charcoal grill, maintain a two-zone fire so you can sear over hot coals and finish on the cooler side. For gas grills, use a hot side and a lower-temperature side. Clean and oil grates before preheating to prevent sticking.
