Prepare strawberries

Rinse the strawberries under cold water and pat dry. Remove the green caps (hull) and any bruised spots. Quarter larger berries so they blend evenly.

Macerate (optional, for sweeter, juicier purée)

Place the hulled strawberries in a bowl with the granulated sugar and lemon juice. Toss gently and let sit 10–15 minutes. The sugar draws out juices and softens the berries, improving flavor and texture.

Blend to purée

Transfer the macerated strawberries and any released juices to a blender or food processor. Add the optional cold water if you want a slightly thinner consistency. Blend on high until smooth, about 30–45 seconds. If you prefer a chunkier texture, pulse a few times instead.

Strain (optional, for silky texture)

If a seed-free, very smooth purée is desired, pour the blended mixture through a fine-mesh sieve set over a bowl. Use a rubber spatula to press and scrape the purée through, leaving seeds and pulp in the sieve. This takes 1–2 minutes.

Adjust seasoning and finish

Taste the purée and add the vanilla extract if using, and a pinch more sugar or a few drops of lemon juice if needed to balance sweetness and acidity. Stir to combine.

Cool and store

Transfer the purée to a clean container, cover, and refrigerate until chilled if not using immediately. The purée will keep 3–4 days in the refrigerator or can be frozen for up to 3 months in an airtight container.

Optional Finishes & Uses

To garnish desserts: Spoon a small pool of purée on plates or drizzle over ice cream, panna cotta, pancakes, or cheesecake. Sprinkle with chopped mint and a pinch of coarse sugar for a pretty presentation.

To make a quick strawberry sauce: Warm 1/2 cup purée in a small saucepan over low heat for 1–2 minutes. Stir and serve warm. If thicker, simmer gently until reaching desired consistency.

To make a refreshing drink: Add 2–3 tablespoons purée to a glass, top with 4–6 ounces sparkling water or soda, stir, and add ice. Adjust purée amount to taste.
