Grass-Fed Beef Organs
Clean and soak organs
Trim visible connective tissue, membranes and any discolored portions from the liver, heart, and kidney. Slice the liver into 1/4–1/2-inch strips; halve or quarter the heart and slice thinly; slice the kidney open, remove white core/fat and slice. Place all organ pieces in a bowl and pour 2 tablespoons apple cider vinegar and 1 cup filtered water over them. Gently mix to coat and let soak for 20 minutes to help neutralize strong flavors and remove impurities.
Rinse and pat dry
After soaking 20 minutes, drain the vinegar solution and rinse the organs under cold running water. Pat pieces thoroughly dry with paper towels. Drying is important to get a good sear and avoid steaming.
Sear organs
Heat a large heavy skillet over medium-high heat until hot. Add 1 tablespoon extra-virgin olive oil and the 1 tablespoon unsalted grass-fed butter. When butter sizzles, add the liver strips in a single layer without crowding; you may need to cook in batches. Sear liver 1.5–2 minutes per side for a tender medium doneness (cook slightly longer for well done). Remove seared liver to a warm plate and tent with foil.
Cook heart and kidney
Add the remaining 1 tablespoon olive oil to the same skillet. Add the sliced heart and kidney, searing 2–3 minutes per side until browned and cooked through (heart should be opaque but still moist; kidney should be cooked until lightly firm). Remove to the plate with liver.
Finish and combine
Return all organ meats to the skillet, tossing gently with the onions and aromatics. Add sea salt (1 tsp) and freshly ground black pepper (1 tsp). Add 1 tablespoon lemon juice and chopped parsley, toss to combine. Warm through 1–2 minutes — do not overcook to avoid toughness.
Optional: enrich with bone broth
If desired, pour up to 1 cup warm grass-fed beef bone broth into the skillet and simmer 1–2 minutes to create a light jus that will moisten the organs and concentrate flavors. Adjust seasoning to taste.
Rest and serve
Transfer the organs and sauce to a serving dish. Let rest 3–4 minutes. Serve warm, garnished with additional parsley and a lemon wedge. Pair with steamed vegetables, cauliflower mash, or a small portion of whole grains as desired.
Storage and reheating
Cool leftovers to room temperature within 2 hours and refrigerate in an airtight container for up to 2 days. Reheat gently in a covered skillet over low heat with a splash of broth to prevent drying; avoid microwave reheating that overcooks the organs.
