Burger Patties

Method

Prepare Sauce

    In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, Worcestershire sauce, smoked paprika, and black pepper. Stir until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the burgers.

Form Patties

    Divide the ground beef into six equal portions (approximately 3.2 oz / 90 g each). Lightly press each portion into a thin patty about 4 inches (10 cm) diameter and roughly 1/4 inch thick at the center; edges can be slightly thicker. Do not overwork the meat. Season both sides with kosher salt and freshly ground black pepper just before cooking.

Toast Buns

    Heat a large skillet or griddle over medium heat. Melt the unsalted butter and brush the cut sides of the brioche buns. Toast buttered sides on the skillet until golden, about 1–2 minutes. Keep toasted buns warm.

Cook Patties

    Sear First Side

    Increase heat to medium-high and add 1 tablespoon vegetable oil to the skillet. Working in batches if necessary, place patties on the hot surface. Cook 2 minutes without moving to develop a crust.

    Flip each patty and immediately place one slice of cheese (American, cheddar, or Swiss depending on the layer — see assembly note) on top. Cook another 1½–2 minutes for medium (internal temp ~145–150°F / 63–66°C). If you prefer well-done cook 2½–3 minutes. Repeat for all patties.

    When cheese has melted, remove patties to a warm plate and tent loosely with foil to hold heat.

Assemble Burgers

    Spread about 1 tablespoon of the prepared sauce on the bottom half of each toasted bun.

    Place an iceberg lettuce leaf on the sauced bottom bun to act as a moisture barrier.

    Stack three patties per burger: start with a patty topped with American cheese, then a patty topped with cheddar, then a patty topped with Swiss. If you cooked cheeses on patties in sequence, arrange so each burger has one of each cheese. Place two to three dill pickle chips and one tomato slice on top of the stacked patties, then add a few red onion rings.

    Spread a thin layer of sauce on the inside of the top bun, place it on the burger, press down gently to compress the stack, and insert a long skewer through the center if desired to secure layers.

    Serve immediately with extra sauce on the side.
