Bring steak to room temperature
Remove the steak from the refrigerator 30–45 minutes before cooking. Pat dry with paper towels to remove surface moisture.

Preheat pan
Heat a heavy skillet (cast-iron preferred) over medium-high heat until very hot, about 4–5 minutes. Add 1 tablespoon olive oil and swirl to coat.

Baste with butter and aromatics
Reduce heat to medium. Add 1 tablespoon butter, the optional rosemary/thyme sprig and the crushed garlic clove. Tilt the pan slightly and spoon the melted butter over the steak repeatedly for 1–2 minutes to baste and build flavor.

Rest the steak
Transfer the steak to a cutting board and tent loosely with foil. Let rest 5–10 minutes to allow juices to redistribute before slicing.

Heat pan for eggs
While the steak rests, wipe the skillet lightly if necessary and return to medium-low heat. Add 1 tablespoon butter and let it melt and foam but not brown.

Fry eggs sunny-side up
Crack 2 eggs gently into the pan (or up to 4 if using a larger pan) and cook undisturbed until the whites are set and edges just crisp, about 2–3 minutes. For slightly set yolks, cover the pan with a lid for 30–45 seconds. Season with 1/8 tsp salt and a pinch of black pepper per egg as they cook.
