    Slice and season

    Freeze steak for 20–30 minutes to firm it (easier to slice). Using a sharp knife, slice across the grain into very thin strips about 1/8–1/4" thick. Place sliced steak in a bowl and add 1 tbsp vegetable oil, soy sauce, Worcestershire, minced garlic, 1 tsp salt and 1 tsp black pepper. Toss to coat and let sit at room temperature for 10 minutes (or refrigerate for up to 30 minutes).

    Cook steak

    Heat a large cast-iron skillet or heavy skillet over medium-high heat until very hot. Add remaining 1 tbsp vegetable oil and swirl. Add steak in a single layer (work in two batches if necessary) and spread it out so it sears. Let cook without moving 1–2 minutes, then stir and cook until just browned and no longer pink, about 2–3 minutes total per batch for thin strips. Remove steak to a plate and keep warm. Deglaze pan with a tablespoon of water if fond sticks.

Onions & Peppers

    Sauté vegetables

    Wipe skillet if desired and return to medium heat. Add butter and 1 tbsp olive oil. When butter melts, add sliced onions and peppers. Season with 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tsp granulated sugar (optional). Cook, stirring occasionally, until onions are soft and golden and peppers are tender, about 8–12 minutes. If the pan gets too dry, add a splash of water.

    Combine with steak

    Return cooked steak to the skillet with the onions and peppers and toss together for 1–2 minutes to meld flavors and warm the meat thoroughly. Taste and adjust seasoning.

Sandwich & Finish

    Prepare rolls

    Preheat broiler (or oven to 425°F / 220°C). Lightly spread mayonnaise on cut sides of each hoagie roll if using. Place rolls cut-side up on a baking sheet and brush outside tops with melted butter for toasting.

    Assemble and melt cheese

    Divide the steak, onion and pepper mixture evenly among the 4 rolls, mounding inside each bottom half. Top each portion with 2 slices of provolone. Place the assembled sandwiches under the broiler until cheese melts and edges of the rolls are toasted, about 1–2 minutes — watch closely to avoid burning. Alternatively, bake at 425°F for 4–6 minutes.

    Finish and serve

    Remove from oven, add pickled hot peppers if desired, close sandwiches, press lightly and serve immediately while hot.
