If using store-bought Russian or Thousand Island dressing, measure 1/2 cup and set aside. To make a quick homemade Russian-style dressing: combine 1/3 cup mayonnaise, 2 tbsp ketchup, 1 tbsp finely chopped dill pickle or relish, 1 tsp prepared horseradish (optional), a pinch of smoked paprika, and salt to taste; whisk until smooth and refrigerate briefly.

Prep sauerkraut
Place the sauerkraut in a fine mesh sieve or clean kitchen towel and press to remove excess liquid. Squeeze gently until well drained. Pat dry with paper towel if needed to avoid a soggy sandwich.

Assemble sandwiches
Lay out the 8 slices of rye bread. Spread about 1 tablespoon of Russian dressing evenly on one side of each slice (reserve some dressing if you like it saucy). On four slices, layer 3 ounces (about 1/3 of the corned beef quantity per sandwich) of thinly sliced corned beef. Divide the drained sauerkraut evenly over the corned beef (about 1/4 cup per sandwich). Season the sauerkraut lightly with a pinch of black pepper. Top each with two slices of Swiss cheese. Place the remaining bread slices, dressing-side down, on top to form four sandwiches.

Butter bread
Spread about 3/4 tablespoon of softened butter on the outer face of each assembled sandwich slice (total ~3 tbsp for four sandwiches). Ensure an even, thin layer for good browning.

Grill sandwiches
Heat a large skillet or griddle over medium-low to medium heat. When hot, place sandwiches buttered-side down in the pan (do not overcrowd; work in batches if necessary). Cook 4–5 minutes until the bread is golden brown and the cheese begins to melt. Gently flip each sandwich and cook the other side another 3–4 minutes, pressing lightly with a spatula or a heavy pan for 1 minute to encourage contact and melting. If cheese is slow to melt, cover the pan for 1–2 minutes to trap heat.

Rest and serve
Transfer sandwiches to a cutting board and let rest 1 minute. Cut each sandwich in half on a diagonal. Serve immediately with extra Russian dressing on the side if desired.
