Make the sauce
In a bowl, whisk together 4 tbs low-sodium soy sauce, 2 tbs oyster sauce, 1 tsp sesame oil, and 1 cup chicken stock. In a small cup, dissolve 1 tbs cornstarch in 2 tbs of the stock or water, then whisk into the sauce mixture until smooth. Set aside.

Prepare and marinate protein
Trim fat from 1 lb chicken thighs or pork and slice thinly across the grain into bite-sized strips (about 1/4" thick). In a bowl combine 1 tbs Shaoxing wine, 1 tsp light soy sauce, and 1 tsp cornstarch. Add the sliced meat, toss to coat, and let marinate for at least 10 minutes (up to 30 minutes) in the refrigerator.

Cook protein
Heat a large wok or heavy skillet over high heat until very hot. Add 1 tbs vegetable oil and swirl. Working in a single layer, add the marinated meat and spread out so it sears. Let it cook undisturbed for 30–60 seconds, then stir-fry until just cooked through (about 2–3 minutes depending on thickness). Remove the meat to a plate and set aside.

Prepare vegetables
While protein marinates, slice 1 small yellow onion thinly, julienne 1 medium carrot, thinly slice 2 celery stalks on the diagonal, mince 3 garlic cloves, peel and finely grate 1 tablespoon ginger, and slice 3 green onions into 1-2" pieces (reserve some green onion greens for garnish). If using bean sprouts, rinse and drain them.

Stir-fry aromatics and vegetables
Return the wok to high heat and add 1–2 tbs vegetable oil. When the oil is shimmering, add minced garlic and grated ginger and stir-fry 10–15 seconds until fragrant (do not burn). Add sliced onion, carrot, and celery and stir-fry 1–2 minutes until they begin to soften but remain crisp. Add bean sprouts now if using and toss for another 30 seconds.

Combine noodles, sauce, and protein
Push the vegetables to the side of the wok, add the cooked noodles and pour the prepared sauce over them. Toss gently to combine so the noodles get coated. Add the cooked meat back into the wok and toss everything together over high heat for 1–2 minutes so the sauce thickens and evenly glazes the noodles and ingredients.

Season and finish
Taste and adjust seasoning: add up to 1/4 tsp salt if needed, 1/4 tsp white or black pepper, and 1/2 tsp chili flakes if you want heat. Drizzle 1/2 tsp toasted sesame oil and fold in sliced green onions (reserve some for garnish). Remove from heat.

Serve
Transfer chow mein to a serving platter or plates. Garnish with remaining green onion greens. Serve immediately.
