    Prepare spread

    In a small bowl, mix the mayonnaise, Dijon mustard and honey until smooth. Set aside.

    Butter bread (for grilling) or leave plain

    If you plan to grill or toast the sandwich, spread about 1/2 tablespoon softened butter on one side of each of 4 bread slices (the outsides). If you prefer not to grill, you can omit the butter.

    Assemble sandwiches

    Place the 4 remaining bread slices on your work surface, buttered side down if you will grill. Evenly spread the honey-mustard mayonnaise on the top of each of these 4 slices. On each slice, layer: 2 slices of honey ham, 1 slice of sharp cheddar, 1 slice of Swiss, a lettuce leaf (if using), and two dill pickle slices (if using). Season each assembled filling lightly with a pinch of black pepper. Top each sandwich with the remaining bread slices, buttered side up if grilling.

    Grill or toast (optional)

    Heat a skillet or griddle over medium heat (about 350°F / 175°C). Place sandwiches in the skillet and press gently with a spatula or a heavy pan. Cook for 3–4 minutes until the bottom is golden and the cheese starts to melt. Flip and cook another 2–3 minutes until the second side is golden and cheese is fully melted. If using a panini press, cook 3–5 minutes until heated through and cheese is melted. If you did not butter the bread, you can brush the outside with the melted butter or olive oil just before grilling to promote browning.

    Serve

    Remove sandwiches from the heat and let rest 1 minute. Cut each sandwich in half diagonally and serve immediately. Optionally serve with chips, a small salad or extra pickles.
