    Prepare spread and bread

    Mix the Dijon mustard and mayonnaise in a small bowl until smooth. Spread softened butter evenly on the outside faces of both bread slices (this will be the exterior for toasting). On the interior face of one slice, spread the Dijon-mayo mixture evenly.

    Assemble sandwich

    Place the Swiss cheese slices on the mustard-mayo–coated slice of bread. Arrange the 6 slices of ham evenly on top of the cheese. If using, add the tomato slices, pickle slices, and lettuce leaf on top of the ham. Finish with the second bread slice, buttered side up, to form a sandwich.

    Toast / grill

    Heat a skillet or griddle over medium heat and add the teaspoon of olive oil or lightly coat with cooking spray. Place the sandwich in the skillet. Cook 3–4 minutes until the underside is golden brown and crisp. Carefully press down with a spatula, then flip the sandwich and cook another 3–4 minutes until the second side is golden and the Swiss cheese is melted. If the outside browns before the cheese melts, reduce heat to low, cover the pan with a lid for 1–2 minutes to help cheese melt without burning the bread.

    Finish and season

    Transfer the sandwich to a cutting board. Let rest 1 minute, then slice in half on the diagonal. Sprinkle a little fresh black pepper over the exposed interior if desired. Serve immediately.
