    Prepare spreads

    In a small bowl, stir together the Dijon mustard and mayonnaise until smooth. This mixture will be spread on the inside of one bread slice to add tang and moisture.

    Butter bread

    Spread the softened butter evenly on the outsides of both bread slices. The buttered side will face out if toasting or grilling so it browns evenly.

    Assemble sandwich

    Place one slice of bread on a clean work surface, buttered side down. Spread the mustard-mayo mixture evenly on the top (inside) of that slice. Layer the sliced cheddar cheese directly on the spread, then place the 3 slices of deli ham on top of the cheese. Add optional dill pickle slices and leaf lettuce if using. Sprinkle a little freshly ground black pepper over the ham (to taste). Top with the second bread slice, buttered side up.

    Serve cold or grill

    Cold: Cut the assembled sandwich in half diagonally or down the middle and serve immediately. Grilled/Toasted: Heat a nonstick skillet or griddle over medium heat. Place the assembled sandwich in the pan and cook 2–3 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted. If using, cover the pan for 30–60 seconds mid-cook to help cheese melt. Remove from pan and let rest 1 minute, then cut and serve.

    Tips

    If you prefer, swap cheddar for Swiss or Gruyère. To make it a warm ham & cheese melt, increase heat slightly and use a lid during grilling. For a crispier crust, use more butter or brush with a little olive oil.
