Prep chops
Remove pork chops from refrigerator 30 minutes before cooking to bring toward room temperature. Pat dry all over with paper towels. Trim any large fat deposits if desired, but leave a thin fat cap for flavor.

Make marinade
In a medium bowl whisk together olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic (finely mince or press garlic), chopped rosemary, thyme leaves, brown sugar, kosher salt, and freshly ground black pepper until sugar dissolves and mixture is emulsified.

Marinate
Place chops in a shallow dish or resealable bag. Pour marinade over chops, turning to coat both sides. Marinate in refrigerator for at least 30 minutes and up to 4 hours. If short on time, a 30-minute marinade still improves flavor.
Grilling

Preheat grill
Preheat a gas or charcoal grill to medium-high, about 400°F (200°C). If using charcoal, allow coals to develop a light white ash. Oil the grates lightly to prevent sticking.

Bring chops to grill temp
Remove chops from marinade and let excess drip off. Discard leftover marinade. Pat chops lightly dry with paper towel again to promote good sear.

Sear and cook
Place chops on the hot grill directly over the heat. Sear for 3 to 4 minutes without moving, until well-browned and marked. Flip and continue grilling for another 3 to 4 minutes. For 1 to 1 1/2-inch thick chops, total grilling time will be about 6 to 10 minutes depending on thickness and grill temperature.

Check doneness
Use an instant-read thermometer inserted into the thickest part (not touching bone). Remove chops from the grill when they reach 145°F (63°C) for slightly pink, juicy pork. If you prefer a firmer texture, remove at 150°F (66°C).

Rest
Transfer chops to a cutting board or plate and tent loosely with foil. Let rest for 5 to 8 minutes; internal temperature will rise a few degrees and juices will redistribute.

While chops rest, melt butter in a small saucepan or microwave-safe bowl. Stir in honey and lemon juice until combined. Brush the glaze over the rested chops just before serving for a glossy, slightly sweet finish.
