    Prepare bread

    Slice the ciabatta roll lengthwise. If you prefer warm bread, toast cut sides under a broiler or in a toaster oven for 1–2 minutes until lightly golden.

    Mix spread

    In a small bowl, combine the butter, Dijon mustard, and mayonnaise until smooth. Spread the mixture evenly on both cut sides of the roll.

    Assemble meats and cheese

    On the bottom half of the roll layer the Genoa salami slices in a slight overlap to cover the bread (about 8 slices). Place the provolone slices on top of the salami. If you prefer the cheese melted, place the assembled open sandwich under a broiler or in a 350°F (175°C) oven for 3–5 minutes until the cheese begins to melt.

    Finish assembly

    Place the top half of the roll over the layered ingredients. Press gently to compact the sandwich, then cut in half if desired.

Vegetables & Garnish

    Layer the lettuce leaves on top of the provolone, then add the tomato slices evenly. Scatter the red onion rings and cornichon/pickle slices over the tomato. Add pepperoncini rings if using. Ensure even distribution so each bite has vegetables and pickles.

Seasoning & Oil

    In a small cup, whisk together the olive oil, red wine vinegar, salt, black pepper, and dried oregano. Drizzle this vinaigrette sparingly over the tomato and onion layers (about 1 teaspoon) before closing the sandwich to add brightness and herb flavor.
