Burger Patties & Seasoning

    Form and season patties

    Divide the ground beef into four equal portions (about 4 oz each) and gently form into thin, wide patties slightly larger than the buns. Do not overwork the meat. Season both sides of each patty with salt, black pepper, garlic powder and onion powder.

    Preheat and cook

    Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and spread. Working in two batches if needed, place two patties in the pan, press lightly with a spatula to increase surface contact. Cook for 2–3 minutes until a deep brown crust forms and juices rise on top. Flip, immediately place one slice of American cheese on each patty, and cook 1–2 minutes more until cheese melts and internal temperature reaches 160°F (71°C). Transfer to a plate and keep warm. Repeat with remaining patties.

    Toast buns

    While patties finish, lightly butter the cut sides of the buns. Place cut-side down on the hot skillet or a separate pan over medium heat and toast until golden, about 1–2 minutes. Remove and set aside.

Toppings & Sauce

    Make burger sauce

    In a small bowl combine mayonnaise (3 tbs), ketchup (2 tbs) and yellow mustard (1 tsp). Stir until smooth. Taste and adjust — add a pinch of salt or extra ketchup if you prefer sweeter.

    Assemble the Double Big Daddy

    Spread about 1 tablespoon of the burger sauce on the bottom half of each toasted bun. Place one cheese-topped patty on the bottom bun, then add half the shredded lettuce (about 1/2 cup), two pickle slices, and a few rings of sliced onion. Stack the second cheese-topped patty on top, then add the tomato slice and remaining lettuce and pickles as desired. Spread remaining sauce on the top bun and close the burger. Press gently, cut in half if desired, and serve immediately.
