Form patties
Divide the 1.25 lb ground beef into four equal portions (about 5 oz each). Lightly shape each portion into a loose ball then press into discs roughly 4 inches in diameter and about 3/4 inch thick. Make a shallow thumb indentation in the center of each patty to reduce puffing when cooking.

Season patties
Season both sides of each patty evenly with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Press the seasoning gently into the surface—do not overwork the meat.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tbs vegetable oil. When the oil is shimmering, add two patties (do not overcrowd). Cook 3-4 minutes without moving until a brown crust forms. Flip and cook another 2-3 minutes for medium doneness. During the last 1 minute of cooking, place one cheddar slice on each patty to melt. Remove to a plate and keep warm. Repeat with remaining two patties.

Cook bacon
In a separate skillet over medium heat, lay out 8 bacon strips in a single layer. Cook, turning occasionally, until crisp and browned, about 8-10 minutes. Transfer bacon to a paper towel-lined plate to drain. Reserve 1 tbs bacon fat in the pan for onion if desired; discard remainder or save for another use.

Slice and prepare produce
Meanwhile, thinly slice 1/2 yellow onion into rings, slice the tomato into 1/4-inch rounds, and separate 4 lettuce leaves. If you prefer softened onions, sauté the onion rings in the reserved bacon fat over medium heat for 3-4 minutes until translucent and slightly browned; otherwise leave raw.

Assemble bacon layers
For each burger, stack two pieces of cooked bacon across the patty so bacon extends slightly beyond the bun. (Each burger will use 4 strips of bacon total — two per patty layer.)

Toast buns
Butter the cut sides of 2 hamburger buns with 2 tbs unsalted butter (about 1 tbs per bun). Toast the buns cut-side down in a clean skillet over medium heat for 1-2 minutes until golden and slightly crisp.

Mix condiments
Spread 2 tsp mayonnaise on the bottom half of each bun. On the top halves, spread 1 tsp ketchup and 1 tsp yellow mustard across the surface, or combine into a quick sauce before spreading if preferred.

Assemble burgers
Place one cheese-topped patty on the mayo-spread bottom bun. Add two strips of bacon across the patty. Add the second patty on top of the bacon, then another two strips of bacon. Top with pickles (4 slices), a tomato slice, onion rings (raw or sautéed), and 2 lettuce leaves. Cap with the sauce-spread top bun.
