Heat a large skillet over medium-high heat. Add 1 tablespoon oil and let warm for 30 seconds.

Add the minced garlic and cook 30–45 seconds until fragrant, careful not to brown.

Add the ground meat to the skillet. Break it up with a spatula and cook until browned with no pink remaining, about 5–7 minutes.

Drain any excess fat if desired, leaving about a tablespoon in the pan to carry flavor. Return to medium heat.

Stir in the chili powder, cumin, smoked paprika, dried oregano, salt, and black pepper. Toast the spices with the meat for 30–60 seconds to bloom their flavor.

Add the crushed tomatoes (or tomato sauce) and 1/2 cup broth. Stir to combine, scraping up any browned bits from the bottom of the pan. If mixture seems very thick, add up to another 2 tablespoons of broth.

Bring the mixture to a low simmer, reduce heat to medium-low, and cook, stirring occasionally, until slightly thickened, about 6–8 minutes. Taste and add the optional 1/2 teaspoon brown sugar if the sauce is too acidic. Adjust salt and pepper to taste.

Turn off heat and set filling aside. Keep warm while you prepare tortillas and toppings.

While the meat simmers, make quick pickled onion to add brightness: combine 1/2 cup apple cider vinegar, 1/2 cup water, 1 teaspoon sugar and 1/4 teaspoon salt in a jar or bowl and stir until dissolved.

Warm the tortillas: stack them and wrap in a damp paper towel or clean kitchen towel. Microwave on high for 30–45 seconds, or heat individually in a dry skillet over medium heat 20–30 seconds per side until pliable and slightly charred in spots.

Assemble tacos: place a warmed tortilla on a plate and spoon about 2–3 tablespoons of the hot taco filling down the center (adjust to preference).

Top each taco with a sprinkle of shredded cheese (about 1–2 tablespoons), a small handful of shredded lettuce, diced tomatoes (about 2 tablespoons), a few sliced radishes if using, and some chopped cilantro and green onion.

Finish with a dollop (about 1 tablespoon) of sour cream or crema, a squeeze of lime wedge, and a drizzle of hot sauce or salsa to taste. Add pickled onions if using for acidity and crunch.
