    Prepare the bread

    Spread the softened unsalted butter evenly on the outer face of each slice of rye bread. This will be the exterior that contacts the skillet for browning.

    Assemble the interior

    Flip the bread so the buttered sides face out. On one slice, spread the Dijon mustard (and yellow/deli mustard if using) in an even layer. Arrange the Swiss cheese slice directly on the mustard, then pile the 6 oz of thinly sliced cooked corned beef evenly over the cheese. If using, top the corned beef with drained sauerkraut, pickles, or caramelized onions. Place the remaining slice of bread on top, buttered side up.

    Grill the sandwich

    Heat a nonstick or cast-iron skillet over medium heat until hot (about 2–3 minutes). Place the assembled sandwich in the skillet. Press gently with a spatula or a heavy pan to compress slightly. Cook until the bottom is golden brown and crisp, about 3–4 minutes. Flip carefully and cook the second side another 3–4 minutes, or until the cheese is melted and both sides are evenly browned. If the bread is browning too quickly before the cheese melts, lower the heat to medium-low, cover the skillet with a lid for 1–2 minutes to help the cheese melt, then finish uncovered.

    Rest and serve

    Transfer the sandwich to a cutting board and let rest 1 minute. Cut in half on the diagonal and serve immediately while warm, with optional pickles or chips on the side.
