    Marinate chicken

    In a bowl combine 1 tbs light soy sauce, 1 tbs Shaoxing wine, 1 tsp cornstarch and 1 tsp vegetable oil. Add the 1 lb diced chicken and toss to coat. Let rest while you prep other ingredients, at least 10 minutes (or refrigerate up to 30 minutes).

    Prep beans

    Trim the ends from 12 oz string beans and cut any very long ones in half so pieces are about 2–3 inches. If you prefer them more tender, blanch: bring a pot of salted water to a boil, blanch beans 2 minutes, then transfer to ice water to stop cooking. Drain well. If you like crisper beans, skip blanching.

    Prep aromatics

    Thinly slice 1/2 cup yellow onion (if using). Mince 4 garlic cloves and 1 tsp fresh ginger. Slice 2 scallions on the bias for garnish and folding into the dish near the end.

Garlic Sauce

    Mix sauce

    In a small bowl whisk together 2 tbs light soy sauce, 1.5 tbs oyster sauce, 1/2 tsp dark soy (optional), 1/2 cup chicken broth (or water), 1 tsp rice vinegar and 1 tsp brown sugar until sugar dissolves. In a separate small cup dissolve 1 tsp cornstarch in 1 tbs cold water, then whisk the slurry into the sauce mixture. Set aside.

Cooking & Finishing

    Heat wok or skillet

    Place a wok or large skillet over medium-high heat until very hot. Add 2 tbs vegetable oil and swirl to coat.

    Stir-fry chicken

    Add the marinated chicken in a single layer and let sear without moving for 30–45 seconds to get some color, then stir-fry for 2–3 minutes until nearly cooked through and lightly browned. Transfer chicken to a plate and set aside.

    Cook aromatics & beans

    If needed add another 1/2 tbs oil to the wok. Add the sliced onion and stir-fry 1 minute until slightly softened. Add the minced ginger and garlic and stir 20–30 seconds until fragrant (don’t burn). Add the string beans and stir-fry 2–3 minutes (or 1–2 minutes if pre-blanched) until beans are tender-crisp and bright green.

    Combine & finish

    Return the chicken and any accumulated juices to the wok. Give the prepared garlic sauce a quick stir and pour it into the wok. Stir constantly for 1–2 minutes as the sauce comes to a gentle simmer and thickens, coating chicken and beans. Taste and adjust seasoning with 1/4 tsp salt and 1/8 tsp black pepper as needed. Turn off heat and stir in 1/2 tsp sesame oil and sliced scallions.

    Transfer to a serving plate, sprinkle with 1 tsp toasted sesame seeds if using, and serve hot with steamed rice or noodles.
