Cook bacon
Place a cold nonstick or cast-iron skillet over medium heat. Lay 2 bacon slices flat in the skillet without overlapping. Cook 3–4 minutes per side until browned and crisp to your liking. Transfer to a paper-towel-lined plate to drain. Reserve 1 teaspoon of bacon fat in the skillet if desired for flavor, otherwise wipe skillet clean and proceed with butter for eggs.

Or cook sausage patty (if using)
If using a sausage patty instead of bacon, heat a skillet over medium, add the sausage patty and cook 4–5 minutes per side until internal temperature reaches 160°F (71°C) and browned. Remove and keep warm.

Place the slice of cheese on one of the toasted halves so it can start to melt while assembling.

Crack the 2 eggs into a small bowl. Add 1 tablespoon milk or water, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until evenly combined and slightly frothy—this yields a tender scrambled or folded egg.

For folded/flat egg (classic sandwich): let eggs set at the edges for about 10–20 seconds, then use a spatula to gently push cooked edges toward the center while tilting the pan so uncooked egg runs to the edges. When mostly set but still slightly moist on top (about 45–60 seconds), fold the omelet in half and slide onto the cheese-topped muffin half. For scrambled style: gently stir and fold eggs with a spatula, removing from heat when soft-curd and slightly underdone so they finish cooking in the sandwich (about 45–60 seconds).

If using bacon, lay the cooked bacon slices over the melted cheese on the bottom half. If using a sausage patty, place the warm patty on the cheese instead.

Add optional fresh spinach leaf or sliced tomato on top of the protein if desired, and a small drizzle of hot sauce or ketchup to taste.

Top with the other toasted muffin half and press gently. Serve immediately while hot.
