    Prepare bread and spread

    Spread mayonnaise on one slice of bread and yellow mustard on the other slice. Set both slices aside on a clean surface.

    Assemble bologna and cheese

    Place two to three slices of bologna evenly over the mayonnaise-coated slice of bread. Lay the two slices of cheddar cheese on top of the bologna. If using pickles, arrange them over the cheese. Sprinkle the black pepper evenly over the cheese and pickles.

    Pan-fry (optional - warmed & toasted)

    Heat a nonstick skillet over medium heat and add the vegetable oil, spreading it across the surface. Butter the outside faces of both bread slices (about 1/2 tbs on each side or as desired). Once the skillet is hot (but not smoking), place the sandwich in the pan. Cook for 2-3 minutes until the bottom is golden brown. Press gently with a spatula, then flip and cook another 2-3 minutes until the other side is golden and the cheese has melted. Reduce heat to low for the last minute if cheese needs more melting without over-browning.

    Alternative - Cold sandwich

    If you prefer not to fry, simply place the top slice of bread (mustard side down) over the assembled sandwich, press gently, slice in half if desired, and serve immediately.

    Serve

    Transfer the hot sandwich to a cutting board, let rest 1 minute, slice diagonally if desired, and serve. Enjoy with chips, fries, or a pickle spear.
