    Prepare bacon

    Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Lay the 8 slices of thick-cut bacon in a single layer on the rack or directly on the foil. Roast in the oven for 15–20 minutes until crisp to your liking, rotating the pan once halfway through. Remove and transfer bacon to a paper towel-lined plate to drain and keep warm.

    Prepare tomato

    While the bacon cooks, slice the large tomato into 1/4-inch (6 mm) thick slices. Lay the slices on a plate, sprinkle evenly with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. This brings out flavor and seasons the interior of the sandwich.

    Toast bread and assemble spread

    Spread 3 tablespoons mayonnaise evenly across the four slices of bread (about 3/4 tbsp per slice). If you prefer toasted bread, heat a skillet over medium heat and add 1 tablespoon butter; toast each slice 1–2 minutes per side until golden, or use a toaster and then butter the cut sides lightly.

    Assemble sandwiches

    Place two bread slices mayonnaise-side up on your work surface. On each, layer 2 lettuce leaves, 4 slices of seasoned tomato, and 4 slices of cooked bacon. Top with the remaining bread slices, mayo-side down. Press gently to compact the sandwich.

    Slice and serve

    Using a sharp knife, cut each sandwich diagonally in half. Serve immediately while bacon is warm. Offer optional pickle slices on the side.

    Add optional ingredients

    If using avocado, slice half an avocado thinly and layer 3–4 slices onto the tomato before adding bacon. Add pickle slices inside the sandwich or serve on the side. Adjust mayonnaise or salt/pepper to taste.
