    Prep the chicken

    Pat the chicken thighs dry with paper towels. Rub the skin and under the skin lightly with olive oil. Season both sides and under the skin with 1.5 tbs kosher salt and 1 tsp freshly ground black pepper, using your fingers to distribute evenly.

    Rest

    Let the seasoned chicken rest at room temperature for 20–30 minutes (or refrigerate up to 4 hours). This helps the seasoning penetrate and promotes even cooking.

    Preheat grill or oven

    If grilling: preheat to medium-high (about 400°F / 200°C) with a two-zone setup if possible (one hotter side and one cooler side). If using an oven: preheat to 425°F (220°C) and position a rack in the middle.

Quick BBQ Sauce

    Make the sauce

    Combine 1 cup ketchup, 3 tbs apple cider vinegar, 3 tbs packed brown sugar, 1 tbs Worcestershire sauce, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp hot sauce (optional), 2 tbs water, 1/2 tsp salt and 1/4 tsp black pepper in a small saucepan. Whisk to combine.

    Simmer

    Place the pan over medium-low heat and bring to a gentle simmer. Cook, stirring occasionally, for 6–8 minutes until slightly thickened and glossy. Taste and adjust seasoning (add a pinch of salt, a splash of vinegar, or more brown sugar to balance). Keep warm off the heat until ready to baste.

Grilling / Roasting & Basting

    Initial high-heat sear

    If grilling: place the chicken skin-side down over the hotter side and sear 4–6 minutes until the skin is browned and crisp but not burned. If roasting: place thighs skin-side up on a sheet pan and roast 15–20 minutes until skin is golden.

    Move to indirect heat

    After searing, move chicken to the cooler side of the grill (or reduce oven temperature to 375°F / 190°C). This allows the chicken to finish cooking without burning the sauce.

    Baste with sauce

    Brush a generous layer of warm BBQ sauce over the skin-side of each thigh. Close the grill lid (or return to oven) and cook for 6–8 minutes. Open and baste again, repeating 2–3 times until an internal temperature of 165°F (74°C) is reached and sauce has set into a glossy glaze. Total finish time will be about 12–18 minutes depending on piece size.

    Final crisp

    For extra caramelization, move chicken back over direct heat for 1–2 minutes per side while watching carefully to avoid charring the sugar in the sauce.

Finishing

    Remove chicken from heat and let rest for 5 minutes to retain juices. Spoon any reserved sauce onto the chicken or serve additional sauce on the side.

    Sprinkle chopped parsley over the chicken and serve with lemon wedges for squeezing. Serve hot.
