    Place diced potatoes in a medium pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until just tender when pierced with a knife, about 6–8 minutes. Drain and let steam-dry for 2 minutes.

    Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tbs vegetable oil and 1 tbs butter. When butter foams, add the drained potatoes in a single layer (work in batches if necessary). Let them sit undisturbed for 2–3 minutes to form a crust, then toss or flip to brown other sides, about 6–8 minutes total.

    Add diced onion and cook until translucent, about 3 minutes. Stir in minced garlic (if using), paprika, thyme, salt, and black pepper. Cook 1–2 more minutes until onions are golden and potatoes are crisp on the outside and tender inside. Taste and adjust seasoning. Stir in chopped parsley just before serving.

Bacon or Sausage

    If using bacon: Place bacon strips in a cold skillet in a single layer. Set over medium heat and cook, turning occasionally, until crisp and golden, about 8–12 minutes depending on thickness. Transfer to a paper towel-lined plate to drain. Reserve 1–2 tsp rendered bacon fat and discard excess.

    If using sausage links: Heat a skillet over medium heat and add 1 tbs oil if pan is dry. Add sausage links and cook, turning frequently, until browned all over and cooked through (internal temperature 160°F/71°C), about 10–12 minutes. Remove and rest 2 minutes before serving.

    After bacon or sausage is done, wipe the skillet lightly if needed and reduce heat to medium-low. Add 1 tbs butter and let it melt, swirling to coat the pan.

    Crack 2 large eggs into the skillet. For sunny-side up: cook undisturbed until whites are set but yolks still soft, 3–4 minutes; cover the pan for 30–45 seconds if you prefer the whites fully set on top. For over-easy/medium: cook until whites set, carefully flip with a spatula and cook 15–45 seconds more depending on desired doneness. Season with 1/4 tsp salt and a pinch of black pepper.

Toast

    While potatoes or meat finish, toast 2 slices of bread to your preference. Spread butter or jam on warm toast and place on the plate.

Plating

    Arrange home fries (about 1 cup), eggs, and toast on a plate. Add bacon (3 slices) or 2 sausage links alongside. Serve immediately while hot.
