Prepare the half chicken
If your bird is not already halved, using sharp poultry shears or a chef's knife, remove the backbone and split the chicken to create two halves; for a ½ BBQ chicken dish use one of the halves (breast, wing, thigh, drumstick attached). Pat the half chicken dry inside and out with paper towels.

Combine kosher salt, brown sugar, paprika, black pepper, garlic powder, onion powder, and cayenne (if using) in a small bowl and mix thoroughly.

Rub the oil evenly over the skin and exposed meat of the half chicken (about 1 tablespoon). Sprinkle the dry rub mixture generously over both sides of the chicken, pressing gently so it adheres. Ensure the seasoning gets into any crevices and under the skin where possible for more flavor.

Set the seasoned chicken on a plate, cover loosely with plastic wrap or foil, and refrigerate for at least 30 minutes or up to 4 hours. If refrigerating longer than 30 minutes, remove and let sit 20–30 minutes at room temperature before cooking.

While the chicken rests (or during the last 10 minutes before cooking), whisk together 1/2 cup BBQ sauce, apple cider vinegar, honey or maple syrup, and hot sauce (if using) in a small bowl. Taste and adjust sweetness or acidity as desired. Reserve about 2 tablespoons of the sauce to brush on at the end if you want a fresh glossy finish.

Grilling (preferred for BBQ flavor)
Preheat a grill for two-zone cooking: one side medium-high (about 400–450°F / 200–230°C) and the other side medium-low (about 300°F / 150°C). Clean and oil the grates. Place the chicken skin-side down over the direct (hotter) zone to sear for 4–6 minutes until skin is golden and releases easily. Move the chicken to the indirect (cooler) side, skin-side up, and close the lid. Cook until the thickest part of the thigh registers 165°F (74°C) on an instant-read thermometer, about 20–30 more minutes depending on size. During the last 6–8 minutes of cooking, brush the chicken with the prepared BBQ sauce every 2 minutes, turning as needed, to build a sticky glaze. Remove chicken from the grill when internal temp reaches 165°F; tent loosely with foil and let rest 5–8 minutes (carryover will raise temperature slightly).

Oven Roasting (if not using a grill)
Preheat the oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and lightly oil the rack. Sear the skin-side of the chicken in a hot oven-safe skillet or under the broiler for 4–6 minutes to crisp the skin, if desired. Transfer the chicken to the prepared rack, skin-side up, and roast in the oven for 25–35 minutes until the thigh reaches 165°F (74°C). In the final 6–8 minutes of roasting, brush the BBQ sauce on the chicken every 2 minutes to build glaze, switching the oven to broil for the last 1–2 minutes if you want a caramelized finish—watch carefully to avoid burning. Remove and rest 5–8 minutes.
