Cook the Chicken
In a slow cooker, place the chicken breasts and sprinkle with smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.
Prepare the Slaw
In a bowl, combine the coleslaw mix, mayonnaise, and apple cider vinegar. Toss until the mixture is well combined and set aside.
Shred the Chicken
Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Mix the shredded chicken with BBQ sauce until well coated.
Assemble the Sandwiches
Toast the sandwich buns if desired. Place a generous portion of the pulled chicken on the bottom half of each bun, top with the prepared slaw, and cover with the top half of the bun.
