Check and chill
Confirm oysters are alive and properly stored: shells should be closed or close when tapped. Keep oysters refrigerated until ready to serve. Allow at least 10 minutes on crushed ice before serving to chill thoroughly.

Shuck (if not pre-shucked)
Use an oyster knife and a towel or glove. Hold oyster with the hinge facing you. Insert the tip of the knife into the hinge and twist gently to pop it open. Run the knife along the top shell to cut the adductor muscle and remove the top shell. Slide the knife under the oyster to cut the bottom adductor muscle but keep the oyster in its bottom shell, preserving the liquor (natural juices). Discard top shell. Repeat for each oyster.

Arrange on bed of ice
Fill a shallow serving platter or bowl with crushed ice (about 2 cups). Nestle each shucked oyster in its half shell into the ice so they sit level and are chilled. Leave at least 3 oysters per order.
Mignonette

Make mignonette
In a small bowl combine 2 tablespoons red wine vinegar, 1 tablespoon finely minced shallot, 1 teaspoon freshly ground black pepper and 1 teaspoon sugar (optional). Stir to dissolve sugar. Let sit at least 5 minutes to marry flavors. Taste and adjust acidity or pepper as needed. Refrigerate if not serving immediately.

Serve immediately while oysters are cold and fresh. Advise guests to consume oysters promptly and to discard any that do not smell briny/fresh or that appear off.
