    Prepare steak

    Pat the steak dry with paper towels. Trim excess fat and slice the steak into 1-inch cubes. Aim for uniform pieces for even cooking (about 16 bites from 1 lb).

    Season the steak cubes evenly with kosher salt, black pepper, and garlic powder. Toss gently so all sides are coated.

    Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Add olive oil and let it shimmer.

    Working in a single layer (cook in two batches if necessary), sear the steak bites without crowding for 1½ to 2 minutes per side to develop a brown crust. Use tongs to turn. Remove seared bites to a plate and tent loosely with foil while you make the filling and finish.

    Reduce heat to medium, add 1 tablespoon butter to the pan. When butter melts, return the seared steak bites to the pan to warm through for 30–45 seconds, then remove to the plate. Reserve pan drippings for finishing (do not rinse pan).

Crab & Cheese Filling

    While the steak is resting, make the filling: in a medium bowl, combine softened cream cheese and Dijon mustard. Beat with a fork or small whisk until smooth and creamy.

    Fold in the crab meat, shredded mozzarella, grated cheddar, sliced green onions, lemon juice, Worcestershire, Old Bay, salt, and black pepper. Mix gently so crab pieces remain intact and the mixture is evenly combined.

    Taste and adjust seasoning — add more Old Bay, salt, or lemon as desired. The filling should be thick but spreadable.

Assembly & Finish

    Using a small spoon (or a piping bag with a wide tip), place about 1 rounded teaspoon of the crab-cheese mixture on top of each warm steak bite. If you prefer the cheese melted more, mound slightly higher.

    Return the stuffed steak bites to the hot skillet in a single layer. If your skillet still has pan drippings, heat briefly on medium. Sprinkle the assembled bites with remaining shredded mozzarella or cheddar (if any) to encourage melting.

    Cover the pan with a lid for 1–2 minutes, or place the skillet under a preheated broiler 3–4 inches from the heat for 1–2 minutes, watching carefully, until the cheese topping is warmed and just melted/bubbly. Do not overcook the steak.
